Dealing With Dragons by: Patricia C. Wrede
This book is hysterical! There are 4 of them in the series.
Dragon's Blood by: Jane Yolen
Another series, but really good!
The House of the Scorpion by: Nancy Farmer
It's more of a sci-fi book, but it's one of the best I've ever read!

The Cirque Du Freak by Darren Shan. Really good books, kinda...gory though, has vampires, a wolf-man, ect..
Vampirates By Justin Somper. Again, vampires, kinda..bloody. But its really good, and may have SOME parts that are kinda mature
(Not sure if you consider those fantasy though)
The Five Anscestors by Jeff Stone. Now, these are REALLY gory in some parts, but the action scenes and the reuinting of the brothers and sister are very good in parts.
The Stoneheart Trilogy by Charlie Fletcher. The first one may seem alittle boring at first, along with the second, but they are REALLY awesome
The Grey Griffens by Derek Benz and J.S. Lewis is also a very fast paced, keep you on the edge of your seat fantasy book with many creatures.
And some I've already seen named like The Last Aprentice series by Joseph Delaney is very good
